Most sherry cask whiskies are matured in either casks that once held Oloroso or Pedro Ximénez sherry. The use of a Fino sherry cask for maturation lends a flavor profile very different from the other two styles by emphasizing the distillate more directly and contributing only a mild sherry influence.

FLAVOR PROFILE

A really light, almost brandy-esque fruitiness along with some slivered almonds. Palate comes in with some dried apples and mixed nuts with a sense of dehydration permeating the flavor notes.
