CASK NO 2542

SUMMARY

Reserved exclusively for visitors to the distillery in Seattle, Washington, this series of single cask releases features a rotation of casks hand-chosen by our blender, production team and various tastemakers.

Cask #2542 is more of a new oak start than a sherry cask finish. Often finishing barrels will take center stage over-shadowing the original cask and grain notes. Not so in this case, while the mass of Pedro Ximenez flavors are immovable, the presence of new oak roots the moment. A sweet reduction balanced by fresh oak bitterness. In addition to the exceptional flavor it is of note that this cask, at 72 months of maturation, is the oldest Westland release to-date.
